Ingredients
- 1 cup pitted black olives
- 1 cup pitted green olives
- 2 tablespoons capers
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/4 teaspoon ground black pepper
- 1 baguette, sliced
- 1 tablespoon olive oil for brushing
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the baguette into 1/4-inch thick slices using a serrated knife. This helps in making smooth, even slices.
- Arrange the baguette slices on a baking sheet.
- Using a pastry brush, lightly brush each slice with olive oil. This will help them crisp up in the oven.
- Place the baking sheet in the preheated oven and bake for about 8-10 minutes until the bread slices are golden brown. Keep an eye on them to prevent burning.
- Meanwhile, in a food processor, combine the black olives, green olives, capers, garlic, lemon juice, olive oil, and black pepper.
- Pulse the ingredients until they are coarsely chopped and form a chunky paste. If needed, scrape down the sides of the processor to ensure an even texture.
- Taste and adjust seasoning if necessary. You might want to add a bit more lemon juice or pepper based on your preference.
- Allow the crostini to cool slightly after removing them from the oven. This prevents the tapenade from soaking into the hot bread and makes it easier to handle.
- Spread a generous amount of olive tapenade on each crostini slice. A spoon works well for this task.
- Arrange the prepared crostini on a serving platter. They can be served warm or at room temperature.
