Ingredients

  • 2 bolillos (or small baguettes)
  • 1 cup refried beans (canned or homemade)
  • 1 cup shredded mozzarella or queso Oaxaca
  • 4 tablespoons unsalted butter
  • 1 tomato, diced
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • Salt and pepper, to taste
  • Salsa, for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). This will ensure your molletes are toasted perfectly.
  2. Slice the bolillos in half lengthwise. If bolillos are unavailable, small baguettes are a great substitute.
  3. Spread 1/2 tablespoon of butter on each cut side of the bread. Make sure to cover the entire surface evenly for a better flavor.
  4. Place the buttered bolillo halves on a baking sheet, cut side up, and bake in the preheated oven for about 5 minutes, or until they begin to crisp.
  5. While the bread is toasting, warm the refried beans in a saucepan over medium heat. Stir occasionally to prevent sticking.
  6. Remove the bread from the oven once slightly toasted, and spread a generous layer of refried beans over each half.
  7. Sprinkle the shredded cheese evenly over the beans. To make it extra cheesy, feel free to add another handful.
  8. Return the bean and cheese-topped bread to the oven. Bake for an additional 5 minutes or until the cheese is fully melted and bubbly.
  9. Remove the molletes from the oven and transfer to a serving plate. Top with diced tomato, sliced avocado, and chopped cilantro.
  10. Season with salt and pepper to taste. Serve immediately with salsa on the side if desired. Enjoy while the cheese is still gooey.
