Ingredients
- 2 bolillos (or small baguettes)
- 1 cup refried beans (canned or homemade)
- 1 cup shredded mozzarella or queso Oaxaca
- 4 tablespoons unsalted butter
- 1 tomato, diced
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- Salt and pepper, to taste
- Salsa, for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C). This will ensure your molletes are toasted perfectly.
- Slice the bolillos in half lengthwise. If bolillos are unavailable, small baguettes are a great substitute.
- Spread 1/2 tablespoon of butter on each cut side of the bread. Make sure to cover the entire surface evenly for a better flavor.
- Place the buttered bolillo halves on a baking sheet, cut side up, and bake in the preheated oven for about 5 minutes, or until they begin to crisp.
- While the bread is toasting, warm the refried beans in a saucepan over medium heat. Stir occasionally to prevent sticking.
- Remove the bread from the oven once slightly toasted, and spread a generous layer of refried beans over each half.
- Sprinkle the shredded cheese evenly over the beans. To make it extra cheesy, feel free to add another handful.
- Return the bean and cheese-topped bread to the oven. Bake for an additional 5 minutes or until the cheese is fully melted and bubbly.
- Remove the molletes from the oven and transfer to a serving plate. Top with diced tomato, sliced avocado, and chopped cilantro.
- Season with salt and pepper to taste. Serve immediately with salsa on the side if desired. Enjoy while the cheese is still gooey.
