Ingredients
- 4 fresh artichokes
- 1 lemon
- 1/3 cup olive oil
- 1/4 cup white wine vinegar
- 2 cloves garlic, minced
- 1/4 cup fresh mint leaves, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup water
Instructions
- Fill a large pot with water and add the juice of half a lemon and a pinch of salt. Bring it to a boil.
- While waiting for the water to boil, prepare the artichokes by trimming the tips of the leaves and cutting off the top third. Remove the tough outer leaves and trim the stem.
- Cut the artichokes in half lengthwise, remove the fuzzy choke with a spoon, and immediately rub the cut sides with lemon to prevent discoloration.
- Once the water is boiling, add the artichokes. Cover the pot, reduce the heat to medium, and simmer for 20-25 minutes or until the leaves can be pulled off easily.
- Remove the artichokes from the water using tongs and let them cool for a few minutes.
- Meanwhile, in a mixing bowl, whisk together the olive oil, white wine vinegar, minced garlic, chopped mint, salt, and pepper to create the marinade.
- Once the artichokes are cool enough to handle, place them into the marinade and ensure they are well-coated. Allow them to marinate for at least 30 minutes or up to 2 hours for more flavor.
- Serve the marinated artichokes on a platter. You can garnish with extra mint leaves for a fresh touch.
