  • 16 fresh anchovy fillets
  • 1 cup olive oil
  • 1/2 cup white wine vinegar
  • 2 cloves garlic, thinly sliced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • Salt and freshly ground black pepper to taste
  • 2 lemons, sliced into wedges

Instructions

  1. Start by rinsing the fresh anchovy fillets under cold water to remove any surface salt or impurities. Pat them dry gently with a paper towel.
  2. In a mixing bowl, combine the olive oil, white wine vinegar, and thinly sliced garlic. Stir well to blend the flavors.
  3. Arrange a layer of anchovy fillets in a shallow dish. Pour part of the olive oil and vinegar mixture over the fillets to cover them, then sprinkle with a pinch of salt and pepper.
  4. Repeat layering with remaining anchovy fillets and marinade, ensuring all fillets are covered adequately.
  5. Cover the dish with plastic wrap and refrigerate for at least 3 hours or overnight if possible, to allow the flavors to meld.
