- 16 fresh anchovy fillets
- 1 cup olive oil
- 1/2 cup white wine vinegar
- 2 cloves garlic, thinly sliced
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh dill
- Salt and freshly ground black pepper to taste
- 2 lemons, sliced into wedges
Instructions
- Start by rinsing the fresh anchovy fillets under cold water to remove any surface salt or impurities. Pat them dry gently with a paper towel.
- In a mixing bowl, combine the olive oil, white wine vinegar, and thinly sliced garlic. Stir well to blend the flavors.
- Arrange a layer of anchovy fillets in a shallow dish. Pour part of the olive oil and vinegar mixture over the fillets to cover them, then sprinkle with a pinch of salt and pepper.
- Repeat layering with remaining anchovy fillets and marinade, ensuring all fillets are covered adequately.
