- Heat 1 tablespoon of olive oil in a large pot over medium heat.
- Add the diced onion, sliced carrots, and chopped celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
- Stir in the minced garlic and ground cumin. Cook for an additional 1 minute until the garlic is fragrant, but be careful not to burn it.
- Add the rinsed lentils, vegetable broth, diced tomatoes, and bay leaf to the pot. Stir everything together.
- Increase the heat to high and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for about 30-35 minutes, or until the lentils are tender.
- Remove the bay leaf from the soup. Stir in lemon juice, and season with salt and pepper to taste.
- If you prefer a smoother soup, you can use an immersion blender to blend some parts of the soup directly in the pot for a thicker consistency.
- Serve the soup hot. A crusty piece of bread makes a great accompaniment.
