Ingredients
- 2 medium zucchinis
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon lemon zest
- 1 clove garlic, minced
Instructions
- 1. Preheat your grill to medium-high heat (about 400°F). Use a gas grill or preheat a grill pan on your stovetop.
- 2. Wash the zucchinis and trim off the ends. Slice them lengthwise into thin strips, about 1/4 inch thick. You’ll need about 8 strips (2 per serving).
- 3. Brush both sides of the zucchini strips with olive oil using a pastry brush. Sprinkle lightly with salt and black pepper.
- 4. Place the zucchini strips on the grill. Grill for 2-3 minutes on each side, or until they have grill marks and are tender. Remove from the grill and let them cool slightly.
- 5. In a medium bowl, combine the ricotta cheese, Parmesan cheese, basil, parsley, lemon zest, and minced garlic. Mix until well combined.
