Ingredients
- 2 medium zucchini, sliced lengthwise into 1/4-inch thick slices
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat your grill to medium-high heat, approximately 400°F (205°C). Make sure the grates are clean to prevent sticking.
- While the grill is preheating, place the zucchini slices on a cutting board.
- In a small bowl, mix olive oil, salt, and pepper. Use a basting brush to lightly coat both sides of each zucchini slice with the olive oil mixture.
- Using tongs, carefully place the zucchini slices on the grill grates. Let them cook for 3-4 minutes on one side without moving them around. This helps get those nice grill marks.
- After 3-4 minutes, use tongs to flip the zucchini slices. Continue grilling for another 3-4 minutes. They should be tender but not mushy.
- Remove the zucchini from the grill and place them on a serving platter. Drizzle with fresh lemon juice and sprinkle the chopped parsley on top, if using.
- For the best results, try to use zucchinis that are similar in size and thickness for even cooking. If they start to char quickly, lower the heat to medium.
