Ingredients
- 12 fresh sardines, cleaned and gutted
- 2 tablespoons olive oil
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, finely chopped
- Salt and freshly ground black pepper to taste
- Lemon wedges for serving
Instructions
- Preheat your grill to medium-high heat (about 375-400°F). This ensures a good sear on the sardines without burning them.
- Rinse and pat the sardines dry with paper towels. Dry sardines will develop a better crust when grilled.
- In a small bowl, mix together the olive oil, lemon juice, minced garlic, parsley, salt, and black pepper. This will be your marinade and basting sauce.
- Brush the sardines generously with the marinade on both sides. Reserve some marinade for basting while grilling.
- Place the sardines on the preheated grill. Grill for about 4-5 minutes on each side, until the skin is crispy and the fish is cooked through. Use a fish spatula or tongs to turn the sardines gently; they are delicate.
- Baste the sardines occasionally with the reserved marinade for added flavor.
- Once cooked, remove the sardines from the grill. Serve them immediately with lemon wedges on the side for an extra zesty kick.
