Ingredients

  • 12 fresh sardines, cleaned and gutted
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • Salt and freshly ground black pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat your grill to medium-high heat (about 375-400°F). This ensures a good sear on the sardines without burning them.
  2. Rinse and pat the sardines dry with paper towels. Dry sardines will develop a better crust when grilled.
  3. In a small bowl, mix together the olive oil, lemon juice, minced garlic, parsley, salt, and black pepper. This will be your marinade and basting sauce.
  4. Brush the sardines generously with the marinade on both sides. Reserve some marinade for basting while grilling.
