Ingredients
- 2 heads radicchio
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- Salt and freshly ground black pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your grill or grill pan to medium-high heat (about 400°F).
- Remove any wilted outer leaves from the radicchio and cut each head in half lengthwise, keeping the core intact. This will help the leaves stay together during grilling.
- In a small bowl, combine olive oil, balsamic vinegar, salt, and pepper. Whisk these ingredients together until well mixed.
- Brush the cut sides of the radicchio halves generously with the balsamic mixture. For best results, let them sit for 5 minutes to absorb the flavors before grilling.
- Place the radicchio halves on the preheated grill cut side down. Grill for about 4-5 minutes, or until they are slightly charred and tender. Use tongs to flip them over and grill for another 2-3 minutes.
- Remove the radicchio from the grill and drizzle with any remaining balsamic mixture.
- Sprinkle chopped parsley over the top for a fresh finish. A tip: Instead of chopping the parsley, you can tear it by hand for a rustic look.
