Ingredients

  • 2 heads radicchio
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 400°F).
  2. Remove any wilted outer leaves from the radicchio and cut each head in half lengthwise, keeping the core intact. This will help the leaves stay together during grilling.
  3. In a small bowl, combine olive oil, balsamic vinegar, salt, and pepper. Whisk these ingredients together until well mixed.
  4. Brush the cut sides of the radicchio halves generously with the balsamic mixture. For best results, let them sit for 5 minutes to absorb the flavors before grilling.
  5. Place the radicchio halves on the preheated grill cut side down. Grill for about 4-5 minutes, or until they are slightly charred and tender. Use tongs to flip them over and grill for another 2-3 minutes.
