Ingredients
- 2 heads of radicchio, halved lengthwise
- 1/4 cup extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat your grill to medium-high, about 400°F (204°C). If using a charcoal grill, let the coals burn until they are covered with gray ash.
- Rinse the radicchio under cold water and pat dry with a kitchen towel. Cut each head in half lengthwise, keeping the core intact to hold the leaves together.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Brush this mixture generously over the cut sides of the radicchio halves.
- Place the radicchio halves on the grill, cut side down. Grill for about 4-5 minutes, then turn and grill for another 4-5 minutes until the leaves are wilted and have a nice char. Tip: Watch closely to avoid burning. You want a nice char without overcooking, which can make the radicchio mushy.
- Transfer the grilled radicchio to a serving plate. Sprinkle with grated Parmesan cheese while it is still warm. This will allow the cheese to melt slightly. Serve immediately. Tip: You can drizzle a bit more balsamic vinegar over the top for extra flavor before serving.
