Ingredients

  • 2 pounds octopus, cleaned
  • 1 lemon, halved
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Rinse the octopus under cold water to remove any debris, and pat dry with paper towels. This helps with caramelization when grilling.
  2. In a large pot, bring water to a boil over high heat. Add the halved lemon, bay leaf, and a pinch of salt.
  3. Once boiling, reduce the heat to medium and add the octopus. Simmer for about 40 minutes, or until the octopus is tender when pierced with a knife.
  4. Preheat your grill to medium-high heat (about 400°F). While the grill heats, prepare a marinade.
