Ingredients
- 12 large langoustines (approximately 2 lbs)
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- Salt and freshly ground black pepper to taste
Instructions
- Start by preheating your grill to medium-high heat, around 400°F. If using a grill pan, place it on the stove and heat to medium-high.
- Rinse the langoustines under cold water and pat them dry with a paper towel. Place them on a cutting board.
- In a small bowl, combine the olive oil, minced garlic, lemon zest, and half of the lemon juice. Stir in the salt, pepper, parsley, and thyme. This will be your marinade.
- Using a sharp knife, gently slice down the back of each langoustine shell without cutting all the way through, then brush the marinade generously over each langoustine, making sure to coat both the inside and outside.
- Once the grill is heated, place the langoustines shell side down onto the grill. Close the lid and let cook for about 4-5 minutes.
- Carefully flip the langoustines using tongs and grill the flesh side for an additional 3-4 minutes or until the langoustines are cooked through and opaque. Be careful not to overcook as they can become tough.
- Transfer the langoustines to a serving platter and drizzle with the remaining lemon juice. Garnish with more parsley if desired before serving. Enjoy your freshly grilled langoustines!
