Ingredients

  • 12 fresh figs
  • 3 ounces Gorgonzola cheese, crumbled
  • 6 slices of prosciutto, halved lengthwise
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Rinse the figs under cold water and gently pat them dry with a clean kitchen towel. Be careful not to bruise them as they can be quite delicate.
  3. Using a small pairing knife, make a small cross cut on top of each fig, making sure not to cut all the way through. You want to create a pocket to hold the filling.
  4. Gently open the figs and fill each one with about 1/2 teaspoon of crumbled Gorgonzola cheese. Don’t overfill as this can make the figs difficult to wrap.
  5. Wrap each cheese-filled fig with a half piece of prosciutto, ensuring the prosciutto overlaps slightly to secure the cheese inside.
  6. Arrange the wrapped figs on the prepared baking sheet. Drizzle them with olive oil and honey. If using, sprinkle freshly ground black pepper and fresh herbs over the top.
  7. Bake in the preheated oven for 10-12 minutes, or until the prosciutto is crispy and the cheese is slightly melted. Keep an eye on them to prevent burning.
