Ingredients

  • 1 French baguette
  • 2 tablespoons olive oil
  • 8 ounces goat cheese, softened
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme leaves, chopped
  • Salt to taste
  • Freshly ground black pepper to taste
  • Optional: 1 clove garlic, halved

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the baguette into 1/4-inch thick slices using a serrated knife. Expect to get around 20 slices.
  3. Arrange the baguette slices on a baking sheet. Take care not to overlap them to ensure they toast evenly.
  4. Using a pastry brush, lightly brush each slice with olive oil. This will help them become golden and crispy.
  5. Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the slices are lightly golden at the edges. Tip: Keep an eye on them to prevent burning.
  6. If using garlic, once the crostini are out of the oven and still warm, gently rub each slice with the cut side of the garlic clove for a subtle garlic aroma.
  7. In a small mixing bowl, combine the softened goat cheese, honey, thyme, salt, and black pepper. Mix until well blended. Tip: Ensure the goat cheese is at room temperature for easier mixing.
  8. Spread about 1 tablespoon of the goat cheese mixture onto each crostini. Be generous for full flavor impact.
  9. Optionally, drizzle a tiny bit more honey over the top of each crostini for extra sweetness.
  10. Serve the crostini immediately while they’re fresh and crisp. They make an exquisite appetizer or snack.
