Ingredients
- 2 medium zucchinis
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Vegetable oil, for frying
Instructions
- Wash the zucchinis thoroughly and cut off the ends. Slice them into sticks approximately 3-4 inches long and 1/2 inch thick.
- Set up your breading station with three shallow bowls: one with flour, one with beaten eggs (lightly seasoned with salt and pepper), and one with the mixture of bread crumbs, Parmesan cheese, garlic powder, and Italian seasoning.
- Dip each zucchini stick into the flour, ensuring it’s fully coated. Shake off any excess flour.
- Then, dip the floured zucchini stick into the beaten eggs, making sure it’s covered completely.
- Finally, roll the zucchini stick in the bread crumb mixture, pressing gently to help it adhere.
- Add vegetable oil to a deep frying pan, about 1-2 inches deep, and heat to 350°F.
- Carefully place a few zucchini sticks into the hot oil, using tongs, and fry for about 2-3 minutes on each side or until golden brown and crispy.
- Remove the fried zucchini sticks with tongs and place them on a plate lined with paper towels to drain excess oil.
