Ingredients

  • 2 medium zucchinis
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Vegetable oil, for frying

Instructions

  1. Wash the zucchinis thoroughly and cut off the ends. Slice them into sticks approximately 3-4 inches long and 1/2 inch thick.
  2. Set up your breading station with three shallow bowls: one with flour, one with beaten eggs (lightly seasoned with salt and pepper), and one with the mixture of bread crumbs, Parmesan cheese, garlic powder, and Italian seasoning.
  3. Dip each zucchini stick into the flour, ensuring it’s fully coated. Shake off any excess flour.
  4. Then, dip the floured zucchini stick into the beaten eggs, making sure it’s covered completely.
  5. Finally, roll the zucchini stick in the bread crumb mixture, pressing gently to help it adhere.
  6. Add vegetable oil to a deep frying pan, about 1-2 inches deep, and heat to 350°F.
  7. Carefully place a few zucchini sticks into the hot oil, using tongs, and fry for about 2-3 minutes on each side or until golden brown and crispy.
  8. Remove the fried zucchini sticks with tongs and place them on a plate lined with paper towels to drain excess oil.
