- ½ cup cornstarch
- 1 cup neutral oil (e.g., vegetable or canola)
- ½ tsp salt
- ¼ tsp garlic powder (optional)
- ¼ tsp paprika (optional)
- For dipping sauce (optional): 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp honey
Instructions
- Press tofu: Drain tofu, wrap in a clean kitchen towel, and place under a heavy object (like a skillet with cans) for 15 minutes to remove moisture.
- Cut tofu into 1-inch cubes. Pat dry with paper towels to ensure no excess moisture remains.
- In a bowl, mix cornstarch, salt, garlic powder, and paprika. Lightly coat tofu cubes in the mixture, shaking off excess.
- Heat oil in a skillet to 350°F (use a thermometer for accuracy). Oil should be ½ inch deep.
- Fry tofu in batches: Add 6-8 cubes at a time to avoid overcrowding. Fry 3-4 minutes per side until golden. Use a slotted spoon to transfer to a wire rack.
- Let cool 2 minutes before serving. The tofu will crisp further as it rests.
