Instructions
- Prepare the calamari by ensuring that it is cleaned and cut into even, uniform rings. This ensures even cooking.
- In a large mixing bowl, combine the flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well to combine.
- Heat the vegetable oil in a large, deep pot to 375°F (190°C). Use a thermometer for accuracy to ensure the oil is hot enough to crisp the calamari but not so hot it burns.
- Dredge the calamari rings in the flour mixture, making sure each piece is thoroughly coated. Shake off any excess flour to prevent the calamari from becoming gummy.
