- 1 pound clean and sliced squid rings
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon paprika
- Vegetable oil for frying
- Lemon wedges for serving

- First, let’s prepare the squid. If your squid aren’t already cleaned, be sure to rinse them under cold water, remove any innards, and slice them into rings. It’s straightforward, but take your time.
- In a large bowl, whisk together the flour, cornstarch, salt, pepper, and paprika. This mixture will give your calamari that tasty, crispy coating.
- Now, heat about two inches of vegetable oil in a deep pan or fryer to 350°F. You’ll need the oil hot enough before introducing the squid.
- Gently coat the squid rings with the flour mixture. Shake off any excess flour – we don’t want them too heavy.
- Carefully place a handful of squid rings into the hot oil. Avoid overcrowding the pan, as this lowers the temperature and makes them less crispy.
- Fry them until they’re golden brown, which should take around 3 to 4 minutes. Keep an eye on them – they cook quickly.
- Using a slotted spoon, transfer the fried calamari to a paper towel-lined plate to drain any excess oil.
- Serve them hot with lemon wedges on the side. A squeeze of lemon adds a wonderful brightness to the calamari.
