Ingredients

  • 2 cups cooked black beans
  • 1 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 8 corn tortillas
  • 1/2 cup crumbled queso fresco or feta cheese
  • 1/4 cup diced white onion
  • 1 ripe avocado, sliced
  • 1/4 cup vegetable oil
  • 1/4 cup sour cream (optional)
  • Chopped cilantro for garnish

Instructions

  1. In a blender, combine the cooked black beans, water, salt, and ground cumin. Blend until smooth and creamy. If you prefer a thinner sauce, add more water, one tablespoon at a time.
  2. Transfer the bean sauce to a medium saucepan and bring to a simmer over medium heat. Cook for 5 minutes, stirring occasionally. Taste and adjust seasoning if necessary.
  3. In a separate skillet over medium-high heat, warm the vegetable oil. Once hot, lightly fry each corn tortilla for about 20 seconds on each side until soft. Drain on paper towels.
  4. Using tongs, dip each fried tortilla into the simmering bean sauce, ensuring it’s well-coated.
  5. Fold each coated tortilla in half, and then in half again, to form a triangle and place on a serving platter.
  6. Once all tortillas are dipped and folded, top with crumbled queso fresco, diced onion, sliced avocado, and a dollop of sour cream if using. Garnish with chopped cilantro.
