Ingredients
- 2 cups cooked black beans
- 1 cup water
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- 8 corn tortillas
- 1/2 cup crumbled queso fresco or feta cheese
- 1/4 cup diced white onion
- 1 ripe avocado, sliced
- 1/4 cup vegetable oil
- 1/4 cup sour cream (optional)
- Chopped cilantro for garnish
Instructions
- In a blender, combine the cooked black beans, water, salt, and ground cumin. Blend until smooth and creamy. If you prefer a thinner sauce, add more water, one tablespoon at a time.
- Transfer the bean sauce to a medium saucepan and bring to a simmer over medium heat. Cook for 5 minutes, stirring occasionally. Taste and adjust seasoning if necessary.
- In a separate skillet over medium-high heat, warm the vegetable oil. Once hot, lightly fry each corn tortilla for about 20 seconds on each side until soft. Drain on paper towels.
- Using tongs, dip each fried tortilla into the simmering bean sauce, ensuring it’s well-coated.
- Fold each coated tortilla in half, and then in half again, to form a triangle and place on a serving platter.
- Once all tortillas are dipped and folded, top with crumbled queso fresco, diced onion, sliced avocado, and a dollop of sour cream if using. Garnish with chopped cilantro.
