Ingredients
- 1 pound Chinese broccoli (Gai Lan), trimmed and cut into 2-inch pieces
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/4 cup water
- Salt, to taste
- 1/4 teaspoon ground white pepper
Instructions
- Rinse the Gai Lan thoroughly under cold water to remove any dirt. Cut the stalks into 2-inch pieces, keeping the leaves whole. Mince the garlic cloves finely.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Ensure the oil is hot but not smoking to avoid burning the garlic.
- Add the minced garlic to the hot oil and stir-fry for about 30 seconds until fragrant, being careful not to let it burn.
- Add the Gai Lan to the skillet. Stir-fry for about 2-3 minutes until the leaves begin to wilt. Add 1/4 cup water to help steam the broccoli and cover the pan with a lid for an additional 2 minutes.
- Remove the lid and add the soy sauce, oyster sauce, sesame oil, sugar, and ground white pepper. Toss everything together to ensure the Gai Lan is evenly coated with the sauces.
- Taste a piece of the stem to check for doneness and seasoning. Add salt if needed. Stir-fry for another minute till everything is well combined.
- Transfer the Gai Lan to a serving dish. Serve hot as a side dish with rice or as part of a larger meal. Enjoy immediately.
