Ingredients

  • 8 large jalapeño peppers
  • 4 ounces (113 grams) cream cheese, softened
  • 1 cup (113 grams) shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro (optional)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Wear disposable gloves to protect your hands, and carefully slice each jalapeño in half lengthwise. Use a spoon to remove the seeds and membranes. Removing more seeds will make the peppers less spicy.
  3. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until well blended. If using, stir in the chopped cilantro for extra flavor.
  4. Stuff each jalapeño half with the cheese mixture. Make sure to fill them generously, smoothing the tops with the back of a spoon.
  5. Place the stuffed jalapeños on the prepared baking sheet, cut side up. Drizzle the jalapeños with olive oil to help them roast evenly.
  6. Bake in the preheated oven for about 15 minutes, or until the jalapeños are tender and the cheese is bubbly and starting to brown. Baking times may vary, so keep an eye on them to ensure they don’t burn.
  7. Remove from the oven and let them cool for a few minutes before serving. Enjoy your Chiles Jalapeños Rellenos warm, perhaps with a side of salsa.
