Ingredients

  • 1 lb (about 0.45 kg) boneless, skinless chicken breasts, cut into thin strips
  • 1/3 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 tablespoon ginger, grated
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • Wooden skewers, soaked in water for at least 30 minutes
  • 2 tablespoons vegetable oil (for grilling)
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce (for peanut sauce)
  • 1 tablespoon lime juice
  • 1 tablespoon sugar
  • 1/3 cup warm water

Instructions

  1. In a large bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, turmeric, coriander, cumin, grated ginger, and minced garlic. Whisk together until well mixed.
  2. Add the chicken strips to the marinade, stirring until each piece is well coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
  3. While the chicken is marinating, prepare the peanut sauce. In a small mixing bowl, combine the peanut butter, soy sauce, lime juice, sugar, and warm water. Stir until smooth and creamy. Set aside.
  4. Preheat an outdoor grill or a stovetop grill pan to medium-high heat (around 400°F). Lightly brush the grates with vegetable oil to prevent sticking.
  5. Thread the marinated chicken strips onto the soaked skewers. It’s okay if the strips overlap slightly.
  6. Place the chicken skewers on the preheated grill. Cook for about 5-7 minutes on each side, or until the chicken is fully cooked and slightly charred (internal temperature should reach 165°F).
  7. Remove the skewers from the grill and let them rest for a few minutes before serving with the peanut dipping sauce.
