Ingredients
- 1 lb (about 0.45 kg) boneless, skinless chicken breasts, cut into thin strips
- 1/3 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 tablespoon ginger, grated
- 3 cloves garlic, minced
- 1 tablespoon vegetable oil
- Wooden skewers, soaked in water for at least 30 minutes
- 2 tablespoons vegetable oil (for grilling)
- 1/2 cup creamy peanut butter
- 2 tablespoons soy sauce (for peanut sauce)
- 1 tablespoon lime juice
- 1 tablespoon sugar
- 1/3 cup warm water
Instructions
- In a large bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, turmeric, coriander, cumin, grated ginger, and minced garlic. Whisk together until well mixed.
- Add the chicken strips to the marinade, stirring until each piece is well coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
- While the chicken is marinating, prepare the peanut sauce. In a small mixing bowl, combine the peanut butter, soy sauce, lime juice, sugar, and warm water. Stir until smooth and creamy. Set aside.
- Preheat an outdoor grill or a stovetop grill pan to medium-high heat (around 400°F). Lightly brush the grates with vegetable oil to prevent sticking.
- Thread the marinated chicken strips onto the soaked skewers. It’s okay if the strips overlap slightly.
- Place the chicken skewers on the preheated grill. Cook for about 5-7 minutes on each side, or until the chicken is fully cooked and slightly charred (internal temperature should reach 165°F).
- Remove the skewers from the grill and let them rest for a few minutes before serving with the peanut dipping sauce.
