Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 2 cups diced tomatoes
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon balsamic vinegar
  • 4 ounces mozzarella cheese, sliced
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your grill to medium-high heat, about 400°F. This will help cook the chicken evenly and quickly.
  2. While the grill is heating, prepare the bruschetta topping. In a medium bowl, combine diced tomatoes, minced garlic, chopped basil, 1 tablespoon of olive oil, 1/2 teaspoon salt, and balsamic vinegar. Stir well and set aside to let the flavors meld together.
  3. Pat the chicken breasts dry with paper towels. Drizzle the remaining 1 tablespoon of olive oil over the chicken and season with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Rub the oil and seasoning into the chicken evenly.
