Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil, divided
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 2 cups diced tomatoes
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon balsamic vinegar
- 4 ounces mozzarella cheese, sliced
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat your grill to medium-high heat, about 400°F. This will help cook the chicken evenly and quickly.
- While the grill is heating, prepare the bruschetta topping. In a medium bowl, combine diced tomatoes, minced garlic, chopped basil, 1 tablespoon of olive oil, 1/2 teaspoon salt, and balsamic vinegar. Stir well and set aside to let the flavors meld together.
- Pat the chicken breasts dry with paper towels. Drizzle the remaining 1 tablespoon of olive oil over the chicken and season with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Rub the oil and seasoning into the chicken evenly.
- Place the chicken breasts on the grill. Cook each side for 6-8 minutes, or until the internal temperature reaches 165°F. Use a meat thermometer for accuracy.
- When the chicken is nearly done, place a slice of mozzarella cheese on each breast. Close the grill lid and allow the cheese to melt, about 1-2 minutes.
- Once cooked, remove the chicken from the grill and let it rest on a plate for about 5 minutes. Resting helps the juices redistribute, keeping the chicken moist.
- Top each chicken breast with the tomato-basil bruschetta topping. If you like a bit of heat, sprinkle red pepper flakes on top.
