Ingredients

  • 8 small corn tortillas
  • 2 cups cooked shredded chicken
  • 1 cup refried beans
  • 1 cup salsa
  • 1 cup crumbled queso fresco or feta cheese
  • 1 cup shredded lettuce
  • 1/2 cup chopped onions
  • 1/2 cup chopped cilantro
  • 1 avocado, diced
  • Vegetable oil for frying
  • Salt to taste

Instructions

  1. Heat about 1/2 inch of vegetable oil in a frying pan over medium heat until it reaches 350°F. You can test the oil by dipping a small piece of tortilla; it should sizzle immediately.
  2. Fry each tortilla for about 1-2 minutes on each side until golden brown and crispy. Use tongs to prevent splashing. After frying, place the tortillas on a plate lined with paper towels to drain excess oil. Lightly sprinkle with salt and set aside.
  3. In a small saucepan, heat the refried beans until warm, stirring occasionally. Spread a thin layer of beans on each fried tortilla.
  4. Divide the shredded chicken evenly among the tortillas, placing it on top of the bean layer.
  5. Spoon a generous amount of salsa over the chicken on each tortilla. Feel free to adjust the amount based on your spice preference.
  6. Top each chalupa with crumbled queso fresco, shredded lettuce, chopped onions, and cilantro. Add a few pieces of diced avocado to finish.
