Ingredients
- 8 small corn tortillas
- 2 cups cooked shredded chicken
- 1 cup refried beans
- 1 cup salsa
- 1 cup crumbled queso fresco or feta cheese
- 1 cup shredded lettuce
- 1/2 cup chopped onions
- 1/2 cup chopped cilantro
- 1 avocado, diced
- Vegetable oil for frying
- Salt to taste
Instructions
- Heat about 1/2 inch of vegetable oil in a frying pan over medium heat until it reaches 350°F. You can test the oil by dipping a small piece of tortilla; it should sizzle immediately.
- Fry each tortilla for about 1-2 minutes on each side until golden brown and crispy. Use tongs to prevent splashing. After frying, place the tortillas on a plate lined with paper towels to drain excess oil. Lightly sprinkle with salt and set aside.
- In a small saucepan, heat the refried beans until warm, stirring occasionally. Spread a thin layer of beans on each fried tortilla.
- Divide the shredded chicken evenly among the tortillas, placing it on top of the bean layer.
- Spoon a generous amount of salsa over the chicken on each tortilla. Feel free to adjust the amount based on your spice preference.
- Top each chalupa with crumbled queso fresco, shredded lettuce, chopped onions, and cilantro. Add a few pieces of diced avocado to finish.
