Ingredients
- 24 cooked snails (canned or fresh)
- 2 tablespoons (30ml) olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup (240ml) dry white wine
- 2 cups (480ml) tomato puree
- 1 teaspoon (5ml) sugar
- 1 teaspoon (5ml) dried thyme
- 1 teaspoon (5ml) dried rosemary
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic. Sauté for 3-4 minutes until softened.
- Pour in the white wine and bring to a simmer. Cook for 5 minutes to reduce slightly.
- Add the tomato puree, sugar, thyme, rosemary, salt, and pepper. Stir well to combine. Simmer for 15 minutes, stirring occasionally.
- Add the cooked snails to the sauce. Simmer for an additional 10 minutes, allowing the snails to absorb the flavors of the sauce.
- Remove from heat and garnish with chopped parsley.
