  • 24 cooked snails (canned or fresh)
  • 2 tablespoons (30ml) olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup (240ml) dry white wine
  • 2 cups (480ml) tomato puree
  • 1 teaspoon (5ml) sugar
  • 1 teaspoon (5ml) dried thyme
  • 1 teaspoon (5ml) dried rosemary
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic. Sauté for 3-4 minutes until softened.
  2. Pour in the white wine and bring to a simmer. Cook for 5 minutes to reduce slightly.
  3. Add the tomato puree, sugar, thyme, rosemary, salt, and pepper. Stir well to combine. Simmer for 15 minutes, stirring occasionally.
  4. Add the cooked snails to the sauce. Simmer for an additional 10 minutes, allowing the snails to absorb the flavors of the sauce.
  5. Remove from heat and garnish with chopped parsley.
