Ingredients

  • 1 baguette, sliced into 1/2 inch slices
  • 2 tablespoons olive oil
  • 1 clove garlic, peeled and halved
  • 8 ounces burrata cheese, drained
  • 2 medium tomatoes, diced
  • 10 fresh basil leaves, roughly torn
  • 1 tablespoon balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). While the oven is heating, arrange the baguette slices on a baking sheet in a single layer.
  2. Brush each slice lightly with olive oil. This will help them toast nicely and become golden and crisp in the oven.
  3. Toast the bread in the preheated oven for 8-10 minutes, or until the edges start to turn golden brown.
  4. After removing the bread from the oven, rub the cut side of the garlic clove gently over each toast.
  5. In a small bowl, combine the diced tomatoes and torn basil leaves. Add a pinch of salt and pepper to taste, mixing well.
  6. Tear the burrata gently with your hands into bite-sized pieces and distribute it evenly over each toast.
  7. Top each toast with a spoonful of the tomato and basil mixture, making sure each bite has a bit of everything.
  8. Drizzle a small amount of balsamic glaze over the top of each bruschetta for a touch of sweetness that complements the creamy cheese.
  9. Serve immediately and enjoy the burst of flavors and textures! These are best enjoyed fresh but can be prepared slightly ahead and assembled just before serving.
