Ingredients

  • 4 ripe tomatoes
  • 2 cloves garlic
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 1/4 cup fresh basil leaves
  • Salt to taste
  • Black pepper to taste
  • 1 French baguette
  • 1/4 cup parmesan cheese (optional)

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Dice the tomatoes into small cubes, about 1/4 inch in size. Aim to keep all pieces roughly the same size.
  3. Peel and mince the garlic cloves finely using a knife. Minced garlic releases more flavor, which is perfect for this dish.
  4. Combine the diced tomatoes, minced garlic, olive oil, balsamic vinegar, salt, and pepper in a mixing bowl. Stir gently until all ingredients are well mixed.
  5. Slice the baguette diagonally into 1/2 inch slices for a nice presentation. This can also help the bread hold the topping better.
  6. Place the slices onto a baking sheet in a single layer. Brush each slice with a bit of olive oil to help them toast nicely.
  7. Toast the bread in the preheated oven for about 5 minutes or until the edges turn golden brown.
  8. While the bread is toasting, chiffonade the basil by stacking the leaves, rolling them tightly, and slicing across the roll to create thin ribbons.
  9. Once the bread is toasted, remove from the oven and let it cool slightly.
  10. Top each slice of bread with a spoonful of the tomato mixture. Try to get a mix of tomatoes, garlic, and juices on each slice.
  11. Sprinkle the chiffonade basil over the topped bread slices for a fresh pop of color and flavor.
