Ingredients
- 4 slices of rustic Italian bread
- 4 ripe tomatoes, diced
- 2 cloves of garlic
- 1/4 cup fresh basil leaves, chopped
- 3 tablespoons extra-virgin olive oil
- Salt and pepper, to taste
- Balsamic vinegar, for drizzling (optional)
Instructions
- First, preheat your oven to 400°F. You’ll want that bread nicely toasted.
- Slice your bread into about 1-inch thick pieces. Place them on a baking sheet.
- Once the oven is ready, pop the bread in for about 5 minutes. Keep an eye on it. You’re looking for a lovely golden color.
- While the bread is toasting, dice your tomatoes and chop up the basil. Place them in a mixing bowl.
- Add the olive oil to the tomato and basil mixture, and then give it a good stir. Season with salt and pepper to your liking.
- Peel a clove of garlic and, when the bread is ready, rub a garlic clove gently over one side of each toasted slice. Trust me, it infuses wonderful flavor.
- Top each slice of bread generously with your tomato mixture. You don’t want to skimp here.
- If you’re feeling a little fancy, a drizzle of balsamic vinegar on top wouldn’t hurt.
- Serve it up and enjoy. It’s as simple and tasty as can be.
