Ingredients

  • 4 slices of rustic Italian bread
  • 4 ripe tomatoes, diced
  • 2 cloves of garlic
  • 1/4 cup fresh basil leaves, chopped
  • 3 tablespoons extra-virgin olive oil
  • Salt and pepper, to taste
  • Balsamic vinegar, for drizzling (optional)

Instructions

  1. First, preheat your oven to 400°F. You’ll want that bread nicely toasted.
  2. Slice your bread into about 1-inch thick pieces. Place them on a baking sheet.
  3. Once the oven is ready, pop the bread in for about 5 minutes. Keep an eye on it. You’re looking for a lovely golden color.
  4. While the bread is toasting, dice your tomatoes and chop up the basil. Place them in a mixing bowl.
  5. Add the olive oil to the tomato and basil mixture, and then give it a good stir. Season with salt and pepper to your liking.
  6. Peel a clove of garlic and, when the bread is ready, rub a garlic clove gently over one side of each toasted slice. Trust me, it infuses wonderful flavor.
  7. Top each slice of bread generously with your tomato mixture. You don’t want to skimp here.
  8. If you’re feeling a little fancy, a drizzle of balsamic vinegar on top wouldn’t hurt.
  9. Serve it up and enjoy. It’s as simple and tasty as can be.
