Ingredients
- 2 medium zucchini, sliced into 1/4-inch rounds
- 1 cup all-purpose flour
- 2 large eggs
- 1 tablespoon water
- 1 1/2 cups breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup vegetable oil, for frying
Instructions
- Step 1: Prepare the ingredients. Rinse the zucchini under cold water and pat dry with a paper towel. Slice them into 1/4-inch thick rounds. Gather three mixing bowls or shallow dishes for breading.
- Step 2: Set up the breading station. In the first bowl, add the flour. In the second bowl, whisk together the eggs and water until well combined. In the third bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, salt, and black pepper.
- Step 3: Bread the zucchini. Dip each zucchini slice into the flour, shaking off any excess. Next, dip it into the egg mixture ensuring it’s completely covered, and then press it into the breadcrumb mixture, coating both sides evenly.
- Step 4: Prepare to fry. Heat the vegetable oil in a frying pan over medium-high heat. To test if the oil is ready, drop a small piece of bread into the oil; if it sizzles and turns golden quickly, the oil is at the right temperature.
- Step 5: Fry the zucchini. Carefully place a few breaded zucchini slices in the hot oil, being careful not to overcrowd the pan. Cook each side for about 2-3 minutes or until golden brown. Use tongs to turn the slices gently.
- Step 6: Drain the zucchini. Remove the cooked zucchini slices and place them on a plate lined with paper towels to drain any excess oil. This will keep them crispy.
- Step 7: Serve. Once all the zucchini slices are cooked and drained, serve them hot as an appetizer or side dish. Enjoy them plain or with your favorite dipping sauce.
- Tip: For extra crispy zucchini, make sure not to overcrowd the pan when frying. Zucchini can be soggy if not enough oil is used or if the oil temperature drops.
