Ingredients
- 2 pounds fresh mussels, cleaned and debearded
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup parsley, chopped
- 1/4 cup grated Parmesan cheese
- 1 teaspoon lemon zest
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat your oven to 400°F (200°C). This temperature will ensure the mussels are cooked evenly and the topping is nicely browned.
- Begin by cleaning the mussels under cold running water. Scrub the shells to remove any dirt and debeard them by pulling the fibrous ‘beard’ protruding from the shell. Discard any mussels that are open and do not close when tapped.
- In a large skillet over medium heat, add mussels and cover with a lid. Allow them to steam for about 3-4 minutes or until they open. Remove the mussels from the skillet and discard any that have not opened.
- Separate the mussel shells by gently twisting and discarding the empty half-shell. Arrange the mussels with the meat on top of a baking sheet in a single layer.
- In a mixing bowl, combine breadcrumbs, olive oil, minced garlic, chopped parsley, grated Parmesan cheese, lemon zest, salt, and pepper. Mix well to create the stuffing.
- Spoon a small amount of the breadcrumb mixture onto each mussel, pressing gently to adhere.
- Place the baking sheet in the preheated oven and bake for 8-10 minutes or until the topping is golden brown and crispy.
- Remove from the oven and allow to cool slightly before serving. Serve with lemon wedges for an extra burst of flavor. Enjoy your baked stuffed mussels with a fresh salad or as an appetizer.
- Tip: For an extra flavor boost, add a pinch of red pepper flakes to the breadcrumb mixture or drizzle a little white wine before baking.
- Tip: Ensure your mussels are fresh by purchasing them on the same day you’ll be cooking, and keep them stored on ice until ready to use.
