Ingredients

  • 1 pound green asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Fill a large pot with about 2 inches of water and bring it to a boil over high heat.
  2. Place a steamer basket or a colander over the pot, making sure it doesn’t touch the water.
  3. Add the asparagus to the steamer basket and cover with a lid. Steam for about 4-5 minutes, or until the asparagus are bright green and tender but still crisp.
  4. While the asparagus is steaming, prepare the vinaigrette. In a mixing bowl, combine olive oil, Dijon mustard, red wine vinegar, honey, and minced garlic. Whisk until well combined and emulsified.
  5. Once the asparagus is done, immediately remove them from the steamer and place them on a serving platter.
  6. Drizzle the mustard vinaigrette over the warm asparagus. Toss gently to coat each spear evenly.
  7. Serve immediately, or allow to cool to room temperature.
