Ingredients
- 1 pound green asparagus, trimmed
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon red wine vinegar
- 1 teaspoon honey
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Fill a large pot with about 2 inches of water and bring it to a boil over high heat.
- Place a steamer basket or a colander over the pot, making sure it doesn’t touch the water.
- Add the asparagus to the steamer basket and cover with a lid. Steam for about 4-5 minutes, or until the asparagus are bright green and tender but still crisp.
- While the asparagus is steaming, prepare the vinaigrette. In a mixing bowl, combine olive oil, Dijon mustard, red wine vinegar, honey, and minced garlic. Whisk until well combined and emulsified.
- Once the asparagus is done, immediately remove them from the steamer and place them on a serving platter.
- Drizzle the mustard vinaigrette over the warm asparagus. Toss gently to coat each spear evenly.
- Serve immediately, or allow to cool to room temperature.
