Ingredients

  • 4 slices of crusty bread, such as baguette
  • 2 tablespoons olive oil, divided
  • 1 clove garlic, halved
  • 6 anchovy fillets, chopped
  • 1 small tomato, diced
  • 1 tablespoon capers, drained
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven or toaster oven to 400°F (200°C).
  2. Place the bread slices on a baking sheet and brush each with 1 tablespoon of olive oil.
  3. Toast the bread in the oven for 5-7 minutes, or until golden brown and crispy.
  4. While the bread is toasting, in a small mixing bowl, combine the chopped anchovies, diced tomato, capers, and parsley. Mix well.
  5. Remove the toasted bread from the oven and rub the cut side of the garlic on each slice for extra flavor.
