Ingredients
- 4 slices of crusty bread, such as baguette
- 2 tablespoons olive oil, divided
- 1 clove garlic, halved
- 6 anchovy fillets, chopped
- 1 small tomato, diced
- 1 tablespoon capers, drained
- 1 tablespoon chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Preheat your oven or toaster oven to 400°F (200°C).
- Place the bread slices on a baking sheet and brush each with 1 tablespoon of olive oil.
- Toast the bread in the oven for 5-7 minutes, or until golden brown and crispy.
- While the bread is toasting, in a small mixing bowl, combine the chopped anchovies, diced tomato, capers, and parsley. Mix well.
- Remove the toasted bread from the oven and rub the cut side of the garlic on each slice for extra flavor.
- Spoon the anchovy mixture evenly onto each slice of garlic-rubbed toast.
- Drizzle the remaining olive oil over the top of the bruschettas, and season with a sprinkle of salt and pepper to taste.
- Serve immediately while the bruschettas are warm and aromatic.
