Ingredients

  • 4 slices of crusty bread
  • 2 tablespoons olive oil
  • 2 cloves garlic, peeled and halved
  • 8 anchovy fillets, packed in oil, drained
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon lemon zest
  • Fresh ground black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the slices of bread on a baking sheet. Make sure they are evenly spaced and not overlapping.
  3. Brush each slice of bread with olive oil. Use about half of the oil, reserving the rest for later. Make sure each slice gets a good coating to help it crisp up nicely.
  4. Toast the bread in the preheated oven for 5 minutes, or until they are golden brown and crunchy. Keep a close eye on them to prevent burning.
  5. Once the bread is toasted, remove the baking sheet from the oven. While the bread is still warm, rub each slice with the cut side of the garlic. This will infuse the bread with a subtle garlic flavor.
  6. Lay two anchovy fillets on each slice of toast. If you love anchovies, feel free to add more to your taste!
  7. Drizzle the remaining olive oil over the anchovies, ensuring each slice has a bit of extra shine and flavor.
  8. Sprinkle the chopped parsley and lemon zest over the top of the anchovies. For a burst of freshness, lightly press the parsley onto the fillets so it sticks well.
