  • 1/4 cup fresh lime juice
  • 2 jalapeño peppers, thinly sliced

  • 1 cucumber, thinly sliced
  • 1/4 cup fresh cilantro leaves, chopped
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 avocado, sliced
  • Tortilla chips for serving

Instructions

  1. Begin by preparing your shrimp. Using a sharp knife, butterfly each shrimp by slicing it open along its curved back. Remove any remaining veins or shells. Place the shrimp in a large bowl.
  2. Pour the fresh lime juice over the shrimp. Ensure all shrimp are submerged, as the lime juice will ‘cook’ them in a process called ceviche. Let the shrimp marinate in the refrigerator for about 10-15 minutes, or until they turn opaque and white.
  3. While the shrimp are marinating, prepare the other ingredients. Thinly slice the jalapeño peppers, red onion, and cucumber. Chop the cilantro as well.
